Chocolate Easter Baking!

Easter weekend is here and having a long weekend off work, I decided to do some baking!! All the recipes are gluten free, of course.  I have also listed all the ingredients below.


Rice Krispie Mini Egg Nests


85g Nestle Gluten Free Coco Rice
200g Dairy Milk
Mini Eggs


Melt the chocolate in the microwave or on the hob in a pyrex jug with some boiling hot water and combine Coco Rice and chocolate together in a bowl. Mix together until evenly coated, and put into cake cases. Place Mini Eggs onto in the middle and leave in the fridge to set for around 2 hours. (I’m yet to find Gluten Free Shredded Wheat for nests!)


Creme Egg Brownies


100g melted Dairy Milk
50g butter
125g caster sugar
2 large eggs
30g Doves Farm Gluten Free Plain Flour
30g Cadburys drinking chocolate powder
Mini Creme Eggs


Melt chocolate in the same process as above. Whilst the chocolate is melting, mix all the ingredients together until a smooth mixture. Once the chocolate has melted, allow to cool for a couple of minutes before mixing into the brownie mix.

Pour the mixture into a tray lined with baking paper, and place in the oven on 180 degrees for 20-25 minutes, or until it is springy to touch.

Allow the brownie to cool for around 5 minutes, then place the Creme Egg in the centre of the brownie sections and put in the fridge to cool.


Creme Egg Vanilla Cupcakes


 100g softened butter
150g Doves Farm Gluten Free Self-Raising Flour
150g caster sugar
3 tablespoons of milk
2 large eggs
1/2 teaspoon vanilla extract


Pre-heat the oven to 180 degrees, and add all the ingredients to a large mixing bowl. Spoon evenly into your cupcake cases and bake in the oven for around 20-25 minutes, until they’ve risen and are golden brown.

Allow to cool before doing your butter icing as it can melt it! I use:
100g softened butter
225g icing sugar
1/2 teaspoon vanilla extract
(and you can add food colouring if you wish!)

I used a piping bag and nozzle to decorate, and topped it off with a mini creme egg and some mini eggs!
